Ingredients
1 pound of lean ground beef
2 cloves of garlic, minced
1 onion, diced
2 large carrots, diced
2 potatoes, peeled and diced
1 can of diced tomatoes
1 cup of gluten free beef broth
2 tablespoons of tomato paste
1 teaspoon of oregano
1 teaspoon of thyme
1 teaspoon of rosemary
1 teaspoon of paprika
Salt and pepper to taste
Instructions
1. Heat a large skillet over medium heat and add the ground beef. Cook the beef, stirring occasionally, until it is no longer pink. Drain off any excess fat and set aside.
2. In a slow cooker, add the garlic, onion, carrots, potatoes, tomatoes, beef broth, tomato paste, oregano, thyme, rosemary, and paprika. Stir to combine.
3. Add the cooked beef to the slow cooker and stir to combine. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
