Ingredients
1 pound beef stew meat, cubed
1 pound pork shoulder, cubed
1 large onion, diced

1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
2 tablespoons olive oil
2 cups beef broth
2 bay leaves
1/4 cup white wine
1/4 cup raisins
1/4 cup green olives, pitted and sliced
2 tablespoons chopped pimiento-stuffed olives
Instructions
1. Heat the olive oil in the pressure cooker over medium-high heat. Add the cubed beef and pork and cook, stirring occasionally, until lightly browned, about 5 minutes. Add the onion and garlic and cook until softened, about 3 minutes.
2. Add the cumin, oregano, black pepper, allspice, coriander, cloves, and cinnamon and stir to combine. Cook for 1 minute, stirring constantly.
3. Add the beef broth, bay leaves, white wine, raisins, green olives, and pimiento-stuffed olives. Stir to combine. Lock the lid in place and set the pressure cooker to high pressure for 25 minutes.
4. When the cooking time is finished, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure. Unlock the lid and stir gently to combine. Serve with white rice, black beans, and fried plantains.
Equipment
You will need a pressure cooker for this recipe. If you do not have one, you can use a Dutch oven or a large pot with a tight-fitting lid.
Notes
If you do not have all the spices listed, you can substitute 1 teaspoon of your favorite Caribbean or Latin American seasoning blend. You can also adjust the amount of spices to suit your taste.
You can use any type of olives you like. You can also omit the olives if you prefer.
