Instructions
Begin by heating the olive oil in a large pot over medium-high heat. Add the onion, celery, bell pepper, and garlic and cook until the vegetables are softened and beginning to brown, about 5 minutes. Add the chicken and andouille sausage and cook until the chicken is no longer pink, about 5 minutes.
Next, add the diced tomatoes, chicken broth, okra, bay leaves, and cayenne pepper. Bring the mixture to a boil and then reduce the heat to low and simmer for 25 minutes. Stir occasionally, making sure the ingredients are well combined.
