Cooking Light Chicken Cacciatore Recipe

Ingredients
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 large boneless, skinless chicken breasts, cut into cubes
1 teaspoon sea salt
1 teaspoon black pepper
1 (14.5-ounce) can diced tomatoes
1 (6-ounce) can tomato paste
1 (8-ounce) can tomato sauce
1 teaspoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon red pepper flakes
2 bay leaves
1/4 cup white wine
1/4 cup chopped fresh parsley
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and garlic and sauté until the onion is softened and lightly browned, about 5 minutes. Add the cubed chicken and season with the salt and pepper. Cook until the chicken is lightly browned, about 5 minutes.
Add the diced tomatoes, tomato paste, tomato sauce, Italian seasoning, paprika, oregano, red pepper flakes and bay leaves to the skillet. Stir to combine and bring to a simmer. Simmer, stirring occasionally, for 10 minutes. Add the white wine and stir to combine.
Reduce the heat to low and simmer for about 20 minutes, stirring occasionally. Add the chopped parsley and stir to combine. Simmer for an additional 5 minutes. Serve over pasta, rice or with garlic bread.
Equipment
You will need a large skillet, measuring spoons, a can opener, and a wooden spoon.
Notes
This recipe can be easily doubled or tripled to serve a larger crowd. You can also use boneless, skinless chicken thighs instead of chicken breasts. If you want to add more heat, add more red pepper flakes or add a pinch of cayenne pepper.
