Description

Stuffed shells is one of those classic Italian dishes that is so comforting and delicious. Ingredients

For the shells:

• 12 jumbo pasta shells

• 1/2 cup part-skim ricotta cheese

• 1/2 cup low-fat mozzarella cheese, shredded

• 2 tablespoons grated Parmesan cheese

• 2 tablespoons chopped fresh parsley

• 1/2 teaspoon garlic powder

• 1/2 teaspoon dried oregano

• Salt and pepper to taste



For the sauce:

• 1 tablespoon olive oil

• 1/2 cup finely chopped onion

• 2 cloves garlic, minced

• 2 cups diced fresh tomatoes

• 1/2 teaspoon dried oregano

• 1/4 teaspoon dried basil

• Salt and pepper to taste

• 1/2 cup vegetable broth

• 1/4 cup chopped fresh parsley

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Bring a large pot of lightly salted water to a boil. Add the pasta shells and cook for 7 minutes. Drain, and rinse with cold water. Set aside.

3. In a medium bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, garlic powder, oregano, salt and pepper. Mix until well blended. Stuff the shells with the cheese mixture, and arrange in a 9x13 inch baking dish.

4. Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic, and cook for 5 minutes, stirring occasionally. Add the tomatoes, oregano, basil, salt and pepper, and cook for 5 minutes. Add the vegetable broth and parsley, and simmer for 10 minutes. Pour the sauce over the shells in the baking dish.

5. Bake in the preheated oven for 30 minutes. Serve hot.

Notes

You can also add some cooked chicken or ground beef to the cheese mixture for a heartier dish. You can also use any type of sauce you like, such as marinara or Alfredo. If you want to add more vegetables to the sauce, you can add mushrooms, bell peppers, or zucchini.
