Ingredients
2 pounds beef chuck, cut into cubes
2 tablespoons vegetable oil
1 large onion, diced
3 cloves garlic, minced
3 tablespoons flour
1 (14-ounce) can Guinness stout
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
Salt and pepper to taste
1 cup beef broth
2 tablespoons cornstarch
2 tablespoons cold water
Instructions
Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook until it is browned on all sides, about 8 minutes. Remove the beef from the skillet and transfer it to the slow cooker.
Add the onion and garlic to the same skillet and cook until they are softened, about 5 minutes. Add the flour and cook, stirring constantly, for 1 minute. Pour in the Guinness and scrape up any browned bits from the bottom of the skillet. Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, oregano, salt, and pepper. Pour the mixture into the slow cooker.
Add the beef broth to the slow cooker and stir everything to combine. Cover and cook on low for 8 hours.
When the beef is tender and cooked through, remove the lid and turn the slow cooker to high. In a small bowl, whisk together the cornstarch and cold water. Pour the slurry into the slow cooker and stir. Cook for about 15 minutes, until the sauce has thickened.
Serve over mashed potatoes or egg noodles, if desired.

Notes
