Ingredients
2 tablespoons olive oil
1 onion, diced

1 (14.5-ounce) can diced tomatoes
1 (4.5-ounce) can diced green chiles
1 (15-ounce) can black beans, drained and rinsed
2 cups cooked chicken, shredded
1/2 cup frozen corn
4 (6-inch) corn tortillas, cut into strips
1/4 cup cilantro, chopped
Salt and pepper to taste
Optional garnishes: diced avocado, sour cream, shredded cheese, lime wedges, cilantro
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic and jalapeños and sauté until the vegetables are soft, about 5 minutes. Add the cumin, chili powder and oregano and cook until fragrant, about 1 minute.
2. Transfer the onion mixture to a slow cooker. Add the chicken broth, tomatoes, green chiles, black beans, chicken, corn and tortilla strips. Stir to combine. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
3. When the soup is done cooking, stir in the cilantro and season with salt and pepper to taste. Serve with the desired garnishes.
