Ingredients

For the beef tips:

  • 2 pounds beef tips
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
For the sauce:
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

1. Season the beef tips with salt and pepper. Heat the olive oil in the pressure cooker over medium-high heat. Add the beef tips to the pressure cooker and brown on all sides. Remove the beef tips from the pressure cooker and set aside. 2. Add the olive oil to the pressure cooker and heat over medium-high heat. Add the onion and garlic to the pressure cooker and cook for 3-4 minutes, until the onion is softened and fragrant. 3. Add the mushrooms to the pressure cooker and cook for another 3-4 minutes, until the mushrooms have softened. 4. Add the beef broth, tomato paste, Worcestershire sauce, thyme, oregano, and basil to the pressure cooker. Stir to combine. 5. Add the beef tips back to the pressure cooker and stir to combine. 6. Lock the lid on the pressure cooker and set the valve to “sealing”. Cook on high pressure for 25 minutes. 7. When the cooking time is finished, quick release the pressure by setting the valve to “venting”. 8. Carefully open the lid of the pressure cooker and check the beef tips for doneness. The beef tips should be tender and cooked through. 9. If desired, thicken the sauce by cooking on high pressure for an additional 2-3 minutes. 10. Serve the beef tips with mashed potatoes or rice, and enjoy!

Notes
