Ingredients
- 2 lbs oxtail
- 1 onion, finely diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground turmeric
- 1 tablespoon tomato paste
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tablespoons vinegar
Instructions
Start by seasoning the oxtail with salt and pepper. Heat a large skillet to medium-high heat and add the olive oil. Once the oil is hot, add the oxtail and brown for about 4 minutes per side. Once the oxtail is browned, remove from the skillet and set aside.
Add the onion and garlic to the skillet and cook for about 3 minutes. Add the spices and tomato paste and cook for another minute, stirring constantly. Add the beef broth and diced tomatoes and stir to combine. Bring the mixture to a boil and then reduce the heat to low and simmer for about 10 minutes.
Transfer the mixture to a slow cooker and add the oxtail and vinegar. Cover and cook on low heat for 8 hours. Once the oxtail is tender and cooked through, serve with rice, mashed potatoes, or on its own with some crusty bread.

Notes
If you don’t have a slow cooker, you can also make this oxtail curry in a pot on the stove. Follow the same instructions as above, except simmer the mixture for about 2 hours instead of 8 hours.
