1/2 lb. red potatoes, diced
1/2 lb. carrots, diced
1/2 cup frozen peas
2 cups beef broth
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 bay leaf
2 tablespoons fresh parsley, chopped
Instructions
Heat the oil in the pressure cooker over medium-high heat. Add the onion and cook until softened, about 5 minutes. Add the beef and cook until browned, about 5 minutes. Add the garlic, paprika, thyme, oregano, salt, and pepper. Stir to combine and cook for 1 minute. Add the potatoes, carrots, peas, beef broth, tomato paste, Worcestershire sauce, and bay leaf. Stir to combine and bring to a boil. Close the pressure cooker and cook on high pressure for 15 minutes. Let the pressure release naturally for 10 minutes, then quick-release the remaining pressure. Open the pressure cooker and stir in the parsley. Serve warm with your favorite side dishes.
