Ingredients

2 pounds boneless beef short ribs

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 tablespoon olive oil

2 cloves garlic, minced

1 onion, chopped

1 cup beef broth

1/2 cup red wine

2 tablespoons tomato paste

1 teaspoon dried thyme

1 bay leaf

Instructions

Season the ribs with salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the ribs and brown on all sides, about 5 minutes per side. Transfer the ribs to the slow cooker.

Add the garlic and onion to the skillet and cook until softened, about 5 minutes. Add the broth, wine, tomato paste, thyme and bay leaf. Bring to a simmer and cook for 2 minutes. Pour the mixture over the ribs in the slow cooker.

Cover and cook on low for 8 hours, or on high for 4 hours. The ribs should be tender and the sauce should be thickened. Serve the ribs with mashed potatoes, polenta, or egg noodles.

Equipment

You will need a slow cooker, large skillet, and a slotted spoon.

Notes

Feel free to add other vegetables to the slow cooker if desired. Carrots and mushrooms would be a great addition. You can also add other herbs and spices to the sauce if you like. A teaspoon of smoked paprika or a pinch of cayenne pepper would be delicious.
