Ingredients

2 tablespoons olive oil
2 large onions, chopped
3 pounds pork shoulder roast, trimmed and cut into cubes
3 cloves garlic, minced
2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 (15-ounce) can tomato sauce
1 cup ketchup
1/4 cup firmly packed dark brown sugar
3 tablespoons Worcestershire sauce
1/4 cup apple cider vinegar
2 tablespoons Dijon mustard
2 tablespoons molasses
2 tablespoons honey
1 tablespoon liquid smoke
1/4 teaspoon cayenne pepper

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the onions and cook, stirring occasionally, until they are softened and beginning to brown, about 5 minutes. Add the garlic and cook for 1 minute. Transfer the mixture to a 6-quart slow cooker. 2. Add the pork cubes to the slow cooker and sprinkle with the smoked paprika, cumin, chili powder, garlic powder, onion powder, oregano, salt, and pepper. Stir to combine. 3. In a medium bowl, whisk together the tomato sauce, ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, Dijon mustard, molasses, honey, liquid smoke, and cayenne pepper. Pour over the pork in the slow cooker and stir to combine. 4. Cover and cook on low for 8 hours, or until the pork is very tender. 5. Remove the pork from the slow cooker and shred with two forks. Return the pork to the slow cooker and stir to combine with the sauce. 6. Serve the pulled pork on hamburger buns with additional sauce, if desired.
