Ingredients

-1 onion, chopped

-2 cloves garlic, minced

-1 red chilli pepper, chopped

-1 green chilli pepper, chopped

-1 teaspoon ground cumin

-1 teaspoon dried oregano

-1 teaspoon smoked paprika

-1 teaspoon chilli powder

-1/2 teaspoon ground coriander

-1/2 teaspoon ground black pepper

-1/2 teaspoon salt

-500g lean minced beef

-400g tinned chopped tomatoes

-200ml beef stock

-2 tablespoons tomato puree

-1 tablespoon Worcestershire sauce

-1 tablespoon red wine vinegar

-1 tin kidney beans, drained and rinsed

Instructions

1. Heat a large pan over a medium-high heat and add the onion, garlic, and chilli peppers. Cook for a few minutes until the onion is softened.

2. Add the cumin, oregano, paprika, chilli powder, coriander, black pepper, and salt. Stir to combine and cook for a few minutes.

3. Add the mince and cook for about 5 minutes, stirring occasionally, until the mince is browned.

4. Add the tinned tomatoes, beef stock, tomato puree, Worcestershire sauce, and red wine vinegar. Stir to combine and bring to a simmer.

5. Transfer the mixture to a slow cooker and cook on low for 6-8 hours.

6. Add the kidney beans and cook for a further 30 minutes.

7. Serve the chilli con carne with rice, tortillas, or a side of your choice.
