Ingredients

2 tablespoons olive oil

2 onions, diced

3 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground ginger

1 teaspoon turmeric

1 teaspoon cinnamon

1 teaspoon paprika

1/2 teaspoon cayenne pepper

2 tablespoons tomato paste

1/2 cup water

2 pounds boneless lamb shoulder, cubed

1/2 cup dried apricots, chopped

1/2 cup raisins

1/2 cup green olives, pitted and chopped

2 tablespoons fresh parsley, chopped

2 tablespoons fresh cilantro, chopped

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the onions and sauté until softened and beginning to brown, about 5 minutes. Add the garlic, cumin, coriander, ginger, turmeric, cinnamon, paprika, and cayenne pepper. Cook for 1 minute more, stirring constantly. Add the tomato paste and water and stir until combined.

2. Transfer the mixture to the slow cooker. Add the cubed lamb, apricots, raisins, olives, parsley, and cilantro. Stir to combine. Cover and cook on low for 8 hours or on high for 4 hours.

3. Serve over couscous, rice, or flatbreads. Enjoy!

Notes

This recipe can easily be doubled to serve a larger crowd. You can also substitute chicken or beef for the lamb if desired. If you don’t have all of the spices on hand, you can substitute a pre-made Moroccan seasoning blend.
