Delicious Braised Oxtail Recipe Using Pressure Cooker
Description
Braised oxtail is a classic dish that is often served in many restaurants around the world. It is a hearty and comforting dish that is usually cooked in a slow cooker. This version of braised oxtail is cooked in a pressure cooker, which helps to tenderize the meat and infuse the flavors in a much shorter time. The end result is a flavorful, succulent and tender oxtail that is perfect for a special occasion.
Ingredients
For this recipe, you will need: 2 lbs of oxtail, 2 tablespoons of olive oil, 2 cloves of garlic (minced), 1 onion (chopped), 1 carrot (chopped), 1 celery stalk (chopped), 2 tablespoons of tomato paste, 1 cup of red wine, 2 cups of beef stock, 1 bay leaf, 2 sprigs of fresh thyme, 1 teaspoon of sea salt, 1 teaspoon of freshly ground black pepper, and 2 tablespoons of butter.
Instructions
Start by heating 2 tablespoons of olive oil in the pressure cooker over medium heat. When the oil is hot, add the oxtail and brown it on all sides. This will take about 7-10 minutes. Once the oxtail is nicely browned, remove it from the pressure cooker and set aside.
Next, add the garlic, onion, carrot, and celery to the pressure cooker and cook for about 5 minutes, stirring frequently. Once the vegetables have softened, add the tomato paste, red wine, beef stock, bay leaf, and thyme. Stir to combine, then add the browned oxtail back to the pressure cooker.
Secure the lid onto the pressure cooker and set the pressure valve to “seal.” Cook on high pressure for 45 minutes. When the time is up, allow the pressure to naturally release for 10 minutes, then manually release the remaining pressure. Carefully remove the lid and transfer the oxtail to a plate.
Add the butter to the pressure cooker and stir to combine. Simmer on low heat for 5 minutes, stirring occasionally. Taste and adjust the seasoning if needed. Serve the oxtail with the sauce, mashed potatoes, and your favorite vegetables.
Equipment
For this recipe, you will need a pressure cooker, a cutting board, a knife, and a wooden spoon.
Notes
It is important to brown the oxtail before cooking it in the pressure cooker. Doing so will help to develop a more flavorful and succulent dish. Make sure to season the oxtail generously before browning it. This will help to further enhance the flavor of the dish.
