Ingredients
To make this delicious dish, you will need 1 cup of basmati rice, 1 teaspoon of turmeric powder, 1 teaspoon of garam masala, 1 teaspoon of cumin seeds, 2 tablespoons of ghee, 1 onion (chopped), 1 tomato (chopped), 1 green chilli (chopped), 1 tablespoon of ginger-garlic paste, 1/2 cup of curd, 1/4 cup of chopped coriander leaves, 2 tablespoons of chopped mint leaves, 1/2 cup of fried onions, 1/2 cup of fried cashew nuts, 1/2 cup of raisins, 1/4 cup of chopped dry coconut, 1/4 cup of chopped mint leaves, 2 tablespoons of lemon juice, and salt to taste.
Instructions
To begin, rinse the basmati rice and soak it in water for 15 minutes. Then, heat the ghee in a pressure cooker and add the cumin seeds. When the seeds begin to crackle, add the chopped onion and fry until golden brown. Add the ginger-garlic paste and fry for a few minutes. Then add the chopped tomato, green chilli, turmeric powder, and garam masala. Fry for a few minutes, stirring constantly until the spices are cooked.
Next, add the soaked basmati rice and fry for a few minutes. Then add the curd and cook for a few minutes. Add the fried onions, cashew nuts, raisins, dry coconut, and mint leaves and fry for a few minutes. Add 4 cups of water, salt to taste, and bring to a boil.
Once the water begins to boil, reduce the heat and close the lid of the pressure cooker. Cook for 3-4 whistles or until the rice is cooked. Once the pressure is released, open the lid and fluff the rice with a fork. Finally, top the biryani with the lemon juice, coriander leaves, and chopped mint leaves. Serve hot with raita or chutney.
