Ingredients

Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the cubed beef and cook, stirring occasionally, until browned. Transfer the beef to a slow cooker.

2. Add the onion, garlic, paprika, cumin, cinnamon, ginger, coriander, turmeric, and cayenne pepper to the slow cooker and stir to combine. Pour the beef broth over the top and stir in the tomato paste.

3. Add the carrots, potatoes, apricots, raisins, and slivered almonds. Stir to combine. Cover and cook on low for 6-8 hours, or until the beef is tender.

4. Once the beef is cooked through, stir in the freshly chopped parsley. Taste and season with salt and pepper as needed. Serve over cooked couscous or rice.

Notes
