1 (14-ounce) can of diced tomatoes
1 (14-ounce) can of coconut milk
1 pound of fish fillets, cut into 1-inch cubes
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the cumin, coriander, turmeric, garam masala, and red chilli powder and cook, stirring, for 1 minute.
3. Add the diced tomatoes and coconut milk and bring to a simmer. Season with salt and pepper.
