Ingredients
2 lbs chicken thighs, boneless and skinless
1 large onion, diced
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon garam masala
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon turmeric
1 (14.5-ounce) can diced tomatoes
1/2 cup coconut milk
2 tablespoons freshly chopped cilantro
Salt and pepper to taste
Instructions
1. Start by seasoning the chicken thighs with salt and pepper and setting aside.
2. Heat a large skillet over medium-high heat and add a few tablespoons of oil. Add the onion and garlic and sauté for a few minutes until the onion is starting to soften.
3. Add the ginger, garam masala, chili powder, cumin, and turmeric and continue to sauté for another minute or two.
4. Add the diced tomatoes and coconut milk and stir to combine. Simmer for a few minutes until the sauce has thickened slightly.
5. Transfer the sauce to a slow cooker and add the chicken thighs. Stir to coat the chicken in the sauce.
