Ingredients
For the meatloaf:
- 1/4 cup Dijon mustard
- 1/3 cup of tomato ketchup
- 1 tablespoon of Worcestershire sauce
- 3 tablespoons of light brown sugar
- 1/2 teaspoon of garlic powder
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 1/2 pounds of ground beef
- 1/2 cup of fresh parsley, finely chopped
- 3/4 cup of plain bread crumbs
- 1/4 cup of grated Parmesan cheese
- 2 large eggs
- 1 teaspoon of freshly ground black pepper
For the glaze:
- 3 tablespoons of tomato ketchup
- 2 tablespoons of light brown sugar
- 1 teaspoon of Worcestershire sauce
Instructions
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a medium bowl, mix together the mustard, ketchup, Worcestershire sauce, brown sugar, and garlic powder. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes. Remove from the heat and let cool.
In a large bowl, mix together the ground beef, parsley, bread crumbs, Parmesan cheese, eggs, pepper, and cooled onion mixture. Add the mustard mixture and mix until thoroughly combined.
Transfer the mixture to the prepared baking dish and shape into a loaf. Bake for 40 minutes.
In a small bowl, mix together the ketchup, brown sugar, and Worcestershire sauce. Brush the glaze onto the meatloaf and continue to bake for an additional 20 minutes, or until the meatloaf is cooked through.
Remove from the oven and let cool for 10 minutes before slicing and serving.
