Ingredients

3 tablespoons oil
2 onions, chopped
2 cloves garlic, minced

1 teaspoon Kashmiri chilli powder
2 tomatoes, chopped
1 kg mutton, cut into cubes
1 cup water
Salt, to taste
2 tablespoons chopped fresh coriander leaves, for garnish

Instructions

1. Heat the oil in a large saucepan over medium heat.
2. Add the onions and garlic and cook until the onions are soft and lightly browned, about 5 minutes.
3. Add the ginger, cumin, coriander, turmeric, garam masala, and chilli powder and cook for 1 minute.
4. Add the tomatoes and cook for another 2 minutes.
5. Add the mutton and cook for 5 minutes, stirring occasionally.
6. Add the water and bring to a boil. Reduce the heat to low and simmer for 1 hour, stirring occasionally.
7. Season with salt, to taste.
8. Garnish with fresh coriander leaves before serving.

Equipment

For this recipe, you will need a large saucepan or Dutch oven, a wooden spoon, and a knife for cutting the mutton into cubes.

Notes

It is best to use fresh mutton for this recipe. If you are using frozen mutton, make sure to thaw it completely before cooking. You can also substitute the mutton with lamb or goat meat. Be sure to adjust the cooking time accordingly.
