Ingredients

2 pounds boneless lamb shoulder, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 carrots, peeled and diced

2 celery stalks, diced

2 cloves garlic, minced

1 tablespoon fresh thyme leaves

2 teaspoons fresh rosemary leaves, chopped

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon ground black pepper

1 (14.5 ounce) can diced tomatoes

3 cups low-sodium beef broth

3 potatoes, peeled and cut into 1-inch cubes

1/4 cup fresh parsley, chopped

1/4 cup fresh chives, chopped

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Add the lamb cubes and cook until lightly browned on all sides, about 8 minutes. Remove the lamb from the skillet and set aside.

2. Add the onion, carrots, celery, garlic, thyme, rosemary, paprika, salt, and pepper to the skillet and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the diced tomatoes and cook for another 2 minutes.

3. Transfer the contents of the skillet to a 6-quart slow cooker. Add the beef broth, potatoes, and reserved lamb cubes. Stir to combine.

4. Cover the slow cooker and cook on low for 8-10 hours, or until the lamb is tender. Add the parsley and chives during the last 10 minutes of cooking time.

5. Serve the stew with crusty bread or over mashed potatoes.

Notes

This stew can also be cooked on the stovetop. To do so, follow the instructions above and transfer the contents of the skillet to a large pot. Simmer uncovered for 1-2 hours, or until the lamb is tender. Be sure to check the stew every 15-20 minutes to make sure it is not boiling too rapidly and adjust the heat as needed.
