Ingredients

  • 3 pounds boneless beef chuck roast, cut into 1-inch cubes
  • 3 cloves garlic, minced

  • 1 teaspoon kosher salt

  • 2 tablespoons apple cider vinegar

Instructions

1. Place the beef cubes in a slow cooker. Add the garlic, cumin, oregano, coriander, smoked paprika, salt, and pepper. Stir to combine.

2. In a medium bowl, mix together the chipotle peppers, beef broth, lime juice, honey, and apple cider vinegar. Pour the mixture over the beef in the slow cooker and stir to combine.

3. Cover the slow cooker and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and cooked through.

4. Once the beef is cooked, use two forks to shred the beef. Stir to combine with the sauce.
